Curry Coconut Chicken

Ingredients:
 

  • Avocado oil spray
  • Boneless, skinless, Chicken thighs – cut into medium size pieces
  • 1 chopped onion
  • 1 tsp minced garlic
  • 3 carrots
  • 2 potatoes
  • Few cauliflower flowers
  • ¾ cup frozen green beans
  • 1 ¼ Tbsp curry powder

***you can also use 2 Tbsp of curry paste
1 can coconut milk
Worm water as needed

***you can add any vegetable that you like. And the amount can very based on how much you need to make.
* You can also use chicken breast or mix both chicken breast and chicken thighs.

Instructions: 


In a wide skillet, using a bit avocado oil spray, on medium heat, fry the chicken thighs until they change color to white. Set them a side.
In the same skillet, sauté the onions , add the garlic and and keep cooking for another minuet. Then add the chicken and the curry powder or paste. And mix well for another 1-2 minuets.
Add the coconut milk and the veggies. Mix well add some worm water, as needed, so the liquid comes up to almost cover the chicken but not cover it completely (it is not a soup…).
Let it cook on medium – low heat for one hour.

Serve with rice or cauliflower rice.
If you serve with rice, keep in mind that the green beans are considered complex carbs as well as the rice.
